Turkey with Minced Black Truffle Stuffing

Try something extra special this Thanksgiving and bring the taste of truffles into your Thanksgiving meal by stuffing the turkey with Minced Black Truffle, and adding a delicious White Truffle Honey Glaze. Awesome!

Preparation: 10 minutes  /  Cooking: 45 minutes

Method

Step 1:  Pre heat oven to 200C. Start by making the stuffing, melting 6oz of the butter in a heavy frying pan and adding the finely chopped onion and garlic. Sweat gently over a low heat until translucent. Add the chopped herbs and the Minced Black Truffle, setting aside to cool.

Step 2:  Rinse the Turkey and remove any giblets, dry with kitchen paper towel. Place on a chopping board and now begin to stuff the bird by pushing the cooled mixture under the skin, in the breast and into the body cavity.

Step 3:  To make the glaze, melt the remaining butter in a saucepan over a low heat and stir in the White Truffle Honey. Place the Turkey, cavity side down into a roasting tray and coat in the glaze, loosely covering with aluminium tin foil. Roast for 3.5 – 4 hours, basting several times until golden. Remove the tin foil for the last 45 minutes to ensure the skin is crisp and golden.
