Pear, Walnut & Blue Cheese Tartlet with Truffle Honey

One of our new customers – Caroline – sent us in this recipe recently. This was a dish Caroline created as a meal for her her family. We thought this looked and sounded fantastic and well worth passing onto to anyone else looking for a delicious recipe suitable as a starter or a light lunch – so here it is.

Below are the instructions on how to create this delightful dish.

Drizzle with Truffle Honey from The Truffle Hunter. Top tip : make filo parcels instead of open tarts for tasty food on the go. We sourced a creamy blue cheese called Bodmin Blue which was an excellent combination with the pear and walnuts.

Ingredients

4 sheets of ready made filo pastry
Walnuts (100g)
Blue Cheese (100g)
2 large pears (pealed and sliced)
Butter (50g)
4 teaspoons of Truffle Hunter minced truffle
4 teaspoons of Truffle Hunter truffle honey

Makes four tartlets. Cook for 10 – 15 minutes at 200C/180 degrees(fan) or gas mark 6.

Preheat the oven and melt half the butter in a non stick frying pan. Add the pears and walnuts to the pan and gently fry until the pears are a light golden brown. Remove from the heat.

Cut the filo sheets in half and brush with melted butter. Lightly place two squares over a tartlet mould and spread the base with 1 teaspoon of minced truffle, top with the pears and walnuts. Crumble 25g of cheese over the centre of each tartlet. Gather up the edges of the filo pastry around the edge of the mould.

Bake for 10 – 15 minutes at 200C/180 degrees(fan) or gas mark 6 until the pastry is a golden brown. Best served warm with a drizzle of truffle honey and a side salad of peppery rocket leaves.
