Appearance, Aroma and Flavour
The surface is black in colour and resembles a warty bark from which the name ‘Summer Scorzone’ is derived. At the beginning of the season they start with a delicate flavour of hazelnut. Then they mature towards midsummer and by August are quite pungent with a strong flavour.
How to use Fresh Truffles
Suitable on any dish they are best sliced if used raw or grateud if cooked. Largely used in Italian cuisine in stuffed pasta or in meat roulade sauces. They are however, fabulous on a slice of bread with a little extra virgin olive oil and a pinch of salt.
For a starter we recommend you allow approximately 10 grams of Black Summer Truffles per person. Please allow approximately 20 grams per person for a main course.

Black Summer Truffles have a delicate flavour and aroma, with hints of earthiness, hazelnuts, chocolate, and vanilla. The flavour develops quickly as the season progresses. However, these truffles are very underrated, by early August when fully mature, they are quite pungent with strong flavour.
