Black Winter Truffles are available from the end of November or the beginning of December through to the end of March or early April depending on the climate conditions in the region.
Appearance, Aroma and Flavour
With a black-brown skin, rounded in shape. The flesh is permeated by white veins and turns to a rich dark brown as the season progresses. These truffles possess a unique, rich, complex, intense chocolate aroma and flavour that’s difficult to forget.
How to use Fresh Truffles
Best enjoyed when finely sliced or shaved they can be used uncooked or lightly sautéed in truffle oil or butter which brings out the flavour to a slightly pepper, bitter taste. Perfect for adding to sauces, pasta dishes or risotto to create a truly memorable dish.
For a starter we recommend you allow approximately 10 grams of Black Winter Truffles per person. Please allow approximately 20 grams per person for a main course.
